Yields 10 servings
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Put the listed components into a saucepan, heat until it reaches a gentle boil, agitating so the sugar melts. Then, take off the heat and leave to reach room temperature fully. Decant to a sealable bottle, seal and store in the refrigerator, where it will keep for up to one month.
For the Batch Mix: Combine all the liquids into a sizeable container, leave to sit for an hour, then pass it through preferably using cheesecloth, so it's perfectly clear.
When ready to serve: Pour 85ml of the cocktail base into a stirring glass packed with ice, gently stirring gently for about 60 seconds to cool it down. Pour to a cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch using a brief mist of the essential oil over the drink.
